The chickens have been very productive over the last couple months. Between the days getting longer and them being on pasture, they are laying a lot of eggs. We get about 15-20 every day.
Most of those are sold to our co-workers and a few folks in town. However, Farmer John and I always have lots of eggs in the fridge to use for our own dinners. We like to keep weeknight dinner simple so we use the eggs for frittata, quiche, egg salad, and (my favorite!) brinner. But, as you can see that's not a lot of variety.
Do you have any suggestions for us? I'd love to hear about some recipes that either use up a lot of eggs at once or any that are your egg-y favorites.

ReplyDeleteI suggest making a Spanish Tortilla. It uses about 6-8 eggs and potatoes and just about anything else you want to add. Google the name and you will find lots of recipes. I love the one from Jamie Oliver. Your dish will be wonderful with such fresh eggs.
ReplyDeleteLouise - I will look it up. Jamie Oliver wants to save WV, so I'm sure he'd approve of us using it :) We also have a lot of potatoes to use up!
DeleteI second Spanish Tortilla! Really good, and easily made with ingredients on hand. Strata (savory bread pudding, basically) is one of my favorite eggy dishes and would be really great with your asparagus. You can also make custards or meringues... think what beautiful beaten egg whites you would have!
ReplyDeleteKate - the strata sounds great. I just bought a local cookbook (as a fundraiser) and there is an asparagus strata in it. The recent cold weather got all our asparagus, but I'm sure there will be more soon!
DeleteFrom our four hens we're getting about 3 a day, which is about perfect for us. We're making crepes tonight to use up a few (probably not eggy enough to make a dent on your supply, but also tasty, and great with asparagus). We're also totally hooked on fried egg sandwiches for lunches.

DeletePickle those eggies! Different pickling brine makes wonderful egg salads after sitting awhile. Dad makes great eggs. Jim ate a dozen within two hours of Dad's delivery!
